Dough aging rooms are custom built to your size specifications.  They feature oversized refrigeration compressors and low velocity stainless steel coils.  This design compensates for warm dough entering the aging room.  The stainless steel wall panels and evaporator offers years reliability and guards against the fermenting dough.
